I call this one “a sippable salt lovers white” cause it’s exactly the kind of thing you should be drinking if you’re a salt licking freak lik me. It tastes like a slice of lemon pie on a sunshine-soaked California coastal day, heavily misted with salty sea breeze.

Drink this with seafood! PLEASE! Briny foods love this wine, so a dozen oysters, or a charcuterie plate of sopressata and castelvetrano olives would both be great places to start. Cooked fish pairs well too…start with Slow Roasted Salmon with Marinated Olives and Potato Chips??? (you can find that recipe in Cook This Book!).

Our beloved winemaker Andy Young, of The Marigny, helmed the winemaking process 🙏 and here's what winemaking secrets I can share:

Each of the 4 varietals were individually pressed on their stems and sent directly from press to tank / barrel with no settling. The Riesling and Pinot Blanc were co-fermented in stainless steel, while the Aligoté and Chardonnay were fermented in French Oak barrels, one new and one neutral.

Cépage: 35% Aligotae, 25% Riesling, 25% Pinot Blanc, 15% Chardonnay
